Raita with bitter gourd(Pavakka)

  • Grate bittergourd.
  • Add 1 tbsp of salt and keep it for 45 minutes. When it becomes watery, squeeze by hand and remove all water.
  • Grind grated coconut and green chillies along with water.
  • Mix yoghurt and buttermilk nicely.
  • Add salt and set it aside.
  • Heat oil in a pan.
  • Add the ingredients for seasoning one by one.
  • Add squeezed bittergourd and fry in a low flame for 5-10 minutes.
  • Allow it to cool.
  • Add it to the prepared buttermilk.
