  • 500 g Rice
  • 2 nos Onions finely chopped
  • 4 nos Bay leaves Karuva ela
  • 4 nos Cardamom Elakka
  • 4 nos Cloves Grambu
  • 2 nos Cinnamon broken into bits, Karugapatta
  • 6-8 nos Pepper corns
  • 1 tsp Cumin seeds Jeerakam
  • 6-8 tbsp Oil
  • Salt As reqd


  • For preparing brown rice, fry the onions till they turn light brown in color
  • Add bay leaves, cardamoms, cloves, cinnamon, peppercorns and cumin seeds. Continue frying till the onions turn dark brown.
  • Add the rice along with the salt and stir for a minute.
  • Pour in enough water for the rice to cook.
  • Brown rice is ready. Serve hot with any vegetable or meat dish.
