Capsicum Rice Combination of rice with capsicum 1 cup Basmati rice1 1/2 nos Capsicum1/2 of Onion1 tsp Lemon juiceSalt (As reqd)Grated coconut (As reqd)Coriander leaves for garnishingFor seasoning: 4 tbsp Oil1/2 tsp Mustard seeds1 tsp Bengal gram (Kadalaparippu)1 tsp Black gram (Uzhunnuparippu)1/2 tsp Turmeric powderCashews (As reqd)2 nos Cloves (Grambu)1" piece Cinnamon (Karugapatta) Cook the basmati rice and spread over a plate. Allow it to cool.Add little ghee to the rice so the grains will be separated. Cut capsicums and onions lengthwise. Heat oil in a pan. Add all the ingredients for seasoning. Add onions followed by capsicums and fry till it becomes tender. Add salt and keep frying for another few minutes. Add cooked rice to it along with lemon juice and mix well.
