Combination of rice with capsicum

Ingredients
- Basmati rice - 1 cup
- Capsicum - 1 1/2 nos
- Onion - 1/2 of
- Lemon juice - 1 tsp
- Salt(As reqd) -
- Grated Coconut(As reqd) -
- Coriander leaves (for garnishing) -
- For seasoning: -
- Oil - 4 tbsp
- Mustard seeds - 1/2 tsp
- Bengal gram(Kadalaparippu) - 1 tsp
- Black gram(Uzhunnuparippu) - 1 tsp
- Turmeric powder - 1/2 tsp
- Cashews(As reqd) -
- Cloves(Grambu) - 2 nos
- Cinnamon(Karugapatta) - 1" piece

Instructions
- Cook the basmati rice and spread over a plate. Allow it to cool.Add little ghee to the rice so the grains will be separated.
- Cut capsicums and onions lengthwise.
- Heat oil in a pan.
- Add all the ingredients for seasoning.
- Add onions followed by capsicums and fry till it becomes tender.
- Add salt and keep frying for another few minutes.
- Add cooked rice to it along with lemon juice and mix well.
- Finally, add grated coconut. Mix well.
- Garnish with coriander leaves.
