Chicken Egg Kizhi is an innovative South Indian snack, very favorful and nutritious. The preparation of the healthy snack involves boiled eggs, minced chicken and a few maida crepes. Chicken Egg Kizhi is fried to a golden brown color and served hot. It is termed ‘mutta kizhi’ in Kerala. This is fondly served as an after school snack and kids enjoy the dish heartily. The first step is to prepare the masala for cooked chicken. Chicken has to be cooked well in advance and kept shredded. You can add the spices as per your preference. Kids love it mild since they are averse to chilly flavors. Saute the onion and masalas in hot coconut oil. While the onion is sauteed well, add the shredded chicken and mix well. Now we are moving on to the next step of our procedure. Its time to prepare the maida crepes.
Prepare a smooth dough of the maida by adding the necessary ingredients. Pluck off small lime sized balls from the dough. Roll out into small chappatis. Take 2 tsp of the chicken masala and place in the centre of the chapati. Place half piece of an egg on top of the chicken masala. Now press the corners of the chappati in the form of a kizhi as illustrated in the picture. The Stuffed Chicken and Egg Kizhi is fried to a golden brown color in enough oil.
