Coconut Rice Easy Coconut rice 2 cups Rice3 tbsp Grated coconut2 ½ Coconut milk2 tbsp Ghee2 inch Cinnamom(broken) (Karugapatta)3 nos Cloves (Grambu)¼ tsp Cardamom seeds (Elakka)2 Bay leaves (optional, Vazhana/Karuga ela)3 nos Green chillies (finely cut)1 tbsp Coconut jaggery (coarsely crumbed)1 tsp Salt12 nos Cashewnuts (cut in small pieces)20 nos Raisins (Onakka munthiri)1 ¼ Water Wash rice and drain. Heat ghee in a large pan over medium heat. Add green chillies, cinnamon, cloves, cardamom and bay leaves. Stir for few seconds.Add jaggery and when it melts, add rice. Saute for 5 minutes. Add coconut milk and water in measured quantity. Increase the heat and bring to boil. Then lower the heat, cover and cook for about 15-20 minutes, till all the liquid has evaporated.Sprinkle grated coconut, cashews and raisins. Lightly fluff the rice with a fork.:- Serve hot. Kerala
