Cream cheese vanilla cake with blueberry filling!!!

  • 250 gm Cream cheese
  • 1 tsp Vanilla essence
  • 70 gm Sugar
  • 2 nos Eggs
  • 1 tbsp Flour
  • Blueberries A small packet
  • 1 tbsp Cornflour
  • 7 medium Crispy biscuits
  • 50 gm Cake margarine/Unsalted butter


  • Crust Preparation:- 1)Crush the biscuits and add one tablespoon sugar to this and add the margarine and mix well. Put this mixture in the cake baking pan(10") and press firm.
  • Bake this at 190-200 degree celcius for 15 minutes in the oven. Keep to cool.
  • Filling preparation:- 1)Take the cornflour and add a little cold water and mix (around 3 tablespoons water) and keep it on the stove and stir well along with the blueberries and a tablespoon sugar till a smooth thick paste forms. 2)Layer the filling on the crust as soon as it is done...spread it evenly. Keep aside.
  • Beat the cream cheese in a bwol till smooth on medium speed.
  • Add in the eggs, sugar and the essence and beat well for around 5 minutes till smooth.
  • Add this to the pan on top of the filling...just pat the pan twice or thrice to remove all air bubbles.
  • Bake this at 180 degrees for 40 minutes.
  • Remove from oven and let it cool for atleast an hour.
  • Refrigerate for a few hours and serve chilled.
