Tomato rice within minutes

- Basmati rice(soaked and drained) - 2 cups
- Ripe tomato(medium) - 3 -

Instructions
- Blend the tomatoes in a mixer grinder to make a puree. Keep it aside.
- Heat 2 - 3 tbsp of ghee in a pressure cooker.
- Add all the spices and allow them to splutter.
- Add the tomato puree and stir well.
- Stir, till the puree starts to thicken.
- :- Do not reduce it too much.
- Add the drained rice and mix well.
- Add 3 1/2 cups of water and mix well again.
- Add reqd salt and mix well.
- Close the cooker with its lid and pressure cook upto 2 whistles on high flame.
- After opening the cooker, add the above fried items along with the chopped coriander leaves.
- Mix everything well.
- :- Serve with any curry or salad and pappadum.

Very easy and turned out really delicious
An easy, good tasting recipe. Some slight variations are to fry the spices with finely sliced onion, and to add a garlic and ginger paste and fry for a little bit.
