- Cooked rice - 1 cup
- Onion - 1
- Mustard - 1 tsp
- Oil - 1 tsp
- Red chilli - 2
- Channa dal - 1 tsp
- Brinjal - 5
- Coriander powder - 1 tsp
- Grated Coconut - 1/4 cup

Instructions
- Heat oil in a kadai add mustard,Channa dal and red chilly saute for a minute.
- Add grated coconut and coriander powder to this and saute for a minute.
- Grind this mix in a mixer.
- Add chopped brinjal to this and saute for 3 minutes.
- Add this ground mix to brinjal and saute for 3minute.
- Add cooked rice to this and mix all together.
- Now easy vangi bath is ready to serve.
