Flip the veggies gently, so that the veggies retain their shape. And the veggies should have a slim coat of oil while getting fried. So add oil little at a time, to get the veggies lightly coated evenly with oil. When picking Ivy gourd in the market, pick the ones that are dark green and very firm. They are the young ones. The pale green ones are the ripe ones. The seeds become red inside when ripe. Discard the ripe ones. Do try this recipe at your Kitchen and impress your family.

Ingredients
  

  • 200 gm Ivy gourd kovakkai
  • 10 nos Shallots
  • 1 tsp Red chili powder
  • 1/4 tsp Turmeric
  • 1 tsp Salt
  • 1/2 tsp Mustard
  • 1/4 cup Roasted Channa Dal powder
  • 2 tsp Oil

Instructions
 

  • Cut shallots and kovakkai and keep aside
  • In pan add oil and temper mustard and channa dal and add onions and saute well
  • Now add kovakkai and red chili powder and turmeric powder and salt mix well , cook for 10 min in medium flame
  • Grind roasted channa dal and add in kovakkai and stir it well.
  • Now its ready to serve hot Ivy gourd fry ( kovakkai fry)
