Ingredients
- Idly Rice - 2 cups
- Raw Rice - 1 cup
- Urad dal - 1 cup
- Fenugreek - 2 tsp
- Ghee - 2 tblsp
- Pepper - 1 tsp
- Jeera - 1 tsp
- Curry leaves(small) -
- Coriander(small) -
- Salt as needed -

Instructions
- Soak all these four Idly Rice, Raw Rice, Urad Dal, Fenugreek for 2 to 4 fours
- Grind all these four together in grinder
- Add salt while grinding. at last stage.
- Mix all in large vessel leave over night for fermentation.
- Take seasoning ingredients for tempering
- Pour into the batter and mix will.
- Take large idly vessel and grease oil.And pour the batter into the vessel
- Keep steamer and close lid and steam for 30 mins
- Take out from steamer and allow to cool for 10 mins.
- Cut idly with tumbler or any other. but i cut in regular idly mold.
- Now Kanchipuram idly is ready.
