This recipes is very famous in kanchipuram. in any Occasion we All make in festivals.

  • 2 cups Idly Rice
  • 1 cup Raw Rice
  • 1 cup Urad Dal
  • 2 tsp Fenugreek
  • 2 tblsp Ghee
  • 1 tsp Pepper
  • 1 tsp Jeera
  • Curry leaves small
  • Coriander small
  • Salt as needed


  • Soak all these four Idly Rice, Raw Rice, Urad Dal, Fenugreek for 2 to 4 fours
  • Grind all these four together in grinder
  • Add salt while grinding. at last stage.
  • Mix all in large vessel leave over night for fermentation.
  • Take seasoning ingredients for tempering
  • Pour into the batter and mix will.
  • Take large idly vessel and grease oil.And pour the batter into the vessel
  • Keep steamer and close lid and steam for 30 mins
  • Take out from steamer and allow to cool for 10 mins.
  • Cut idly with tumbler or any other. but i cut in regular idly mold.
  • Now Kanchipuram idly is ready.
