- Brinjal - 5
- Grated Coconut - 1 cup
- Chillies - 5
- Chilli powder - 1 tsp
- Turmeric powder - 1 tsp
- Mustard - 1 tsp
- Coriander powder - 1 tsp
- Salt - 1 tsp
- Coconut oil - 1 tsp

Instructions
- Heat oil in a kadai. add onions and green chilly and sauté for 2 minutes.
- Add brinjal and sauté for 5 minutes.
- In another kadai, add grated coconut, redchilli powder and turmeric powder, sauté for 2 minutes.
- When coconut turns brown then switch off stove.
- Add this ground mix to brinjal mix and sauté for a minute.
