- Bitter gourd/Pavakka(cut into small pieces) - 2 nos
- Green chillies - 4 nos
- Turmeric powder - 1/4 tsp
- Coconut - 1/2 cup
- Curry leaves(Few) -
- Mustard seeds - 1 tsp
- Salt -
- Oil - 2 tbsp
- Shallots - 4 nos

- Wash the bitter gourd and slice it open. Discard the seeds and pith. Slice the bitter gourd into thin pieces.
- Heat oil in a pan, splutter mustard seeds and add chopped shallots and curry leaves. Saute for 5 minutes.
- When it turns light brown in colour, add turmeric powder and salt. Stir in chopped pavakka pieces into the oil and mix well.
- Grind grated coconut and green chillies into a coarse mixture and add to the bitter gourd. Do not stir. Close with a lid and cook in low flame,
- After a few minutes, remove lid and combine well. Cook for another 2 minutes and remove pan from flame.
- Serve the delicious thoran with rice.
