Ingredients
- Brinjal(large size) - 2 nos
- Tomato - 2 nos
- Fenugreek seeds - 1/2 tsp
- Small onions(kunjulli ) - 8 nos
- Ginger - 1 inch
- Garlic pod - 2 nos
- Green chilly - 2 nos
- Turmeric powder - 1/2 tsp
- Chilli powder - 1 tbsp
- Fennel seeds(perumjeerakam ) - 1/2 tsp
- Tamarind paste - 1 lemon
- Jaggery/Sugar(as required) -
- Oil for frying -
- Curry leaves - 1 sprig
- Salt(to taste) -

Instructions
- Then add curry leaves and fenugreek seeds.
- Grind together small onions, ginger, garlic, green chilly, turmeric powder, chilli powder and fennel seeds. Add this ground paste into the kadai and saute till the raw smell goes.
- Lajawab Baigan is ready. Serve hot with chapatis, roti and puris.
