Cut the snake gourd into thin slices lengthwise and keep aside.
Grind the un - cooked rice, red chillies and salt together in a mixer to a smooth paste (use as little water as possible while grinding).
Apply to the sliced snake gourd and keep aside for about an hour.
Deep fry on a slow gas till the snake gourd turns a nice golden brown color and becomes crisp.
Best served with rice and dal.
Note : The other vegetables that can be used to make phodi are potatoes, karela (bitter gourd), kantola (spiny gourd) and sooran (yam) all of which must be thinly sliced before applying the masala to it.
