For the caramel:-3 tbsp Sugar1 tbsp WaterFor the custard:-500 ml Milk (or 2 cups milk + 1/2 cup condensed milk)5 nos Eggs1 cup Sugar1 no Cardamom (Elakka) Grease an aluminium mould (or non stick) with butter or ghee.Spread the 3 tbsp of sugar evenly on its base.Heat the mould. When the sugar starts turning brown, add 1 tbsp water and heat for a few seconds.Keep the mould aside.Add the milk, eggs, sugar, and cardamom into a mixie and blend well till frothy.Strain the custard through a strainer and pour into the mould.Steam for 5 - 10 mins or until set.:- The steamer should have started steaming before placing the custard.Chill in the freezer for 10 mins and then move it to the fridge.Turn the pudding into a serving plate.Decorate it with cherries or caramelised cashew nuts.:- This is a very easy dessert and a definite success.
