There was quite a good variety of dishes but one thing I admit, Ragi Pudding is the tastiest of all ragi based dishes that I am aware of. Coconut milk combined with jaggery gives a dessert touch to the dish. One thing I assure you, ragi and banana make a terrific combination and your toddler will lap it off completely in one shot. Ingredients
  

  • 300 g Ragi Soak in water for 2 hours
  • 1 ltr Coconut milk
  • 500 gms Jaggery
  • 1 tsp Cardamom powder
  • 1/2 tsp Salt
  • 2 nos. Ripe plantain
  • 1/2 cup Channa dhal
  • 1/2 ltr Water

Instructions
 

  • Cook the channa dhal in required water by adding a pinch of salt.
  • Cut the ripe plantain into small pieces.
  • Grind the soaked ragi by adding required water and strain out the milk using a sieve. Add jaggery and 1/2 tsp salt into it. Mix well and bring it to boil.
  • Then add cooked channa dhal and chopped plantain.
  • Finally pour the coconut milk and combine everything. Do not stop stirring. Bring it to boil, When it is well boiled, turn off the flame.
  • Pour the the ragi pudding into a pudding tray and let it cool. Healthy and easy ragi pudding is ready now.
