While roasting, care has to be taken so the semiya and vermicelli is not too much browned and burnt. Burnt taste destroys the delicious payasam. Roast in low medium flame to a golden brown color. Remember to roast semiya and vermicelli separately so the texture is not damaged. Also make sure that the dessert is free of lumps. Stirring well removes lumps if any.   • Take a thick bottomed vessel and add roasted vermicelli and semolina.
  • Pour milk, water and combine well. Add crushed cardamom and a pinch of salt. Cook until vermicelli and rawa is cooked and done taking about 6 to 7 minutes in a medium flame.
  • When it begins to boil, add sugar. Stir until it dissolves completely. The consistency of the payasam must be medium thick as it becomes thicker when cooled. Remove from the flame. Rest it for about 5 to 10 minutes before you serve. Add roasted nuts(optional), stir and serve.
  • Traditional styled, healthy and delicious Sooji vermicelli kheer /payasam is ready.
