Semolina Vermicelli Kheer is a South Indian sweet dessert made with vermicelli, semolina and milk. This is one of the easiest payasam recipes that gets done under 20 minutes. So whenever you need to satiate your sweet cravings, you can boldly go in for the dish which requires very little ingredients. You don’t really wait for any occasion to prepare the dessert. The aromatic cardamom flavored dessert is a real delight in itself and is popular across the whole of Indian continent fondly called as payasam in South Indian regions and kheer in North Indian states. No festival in India is ever complete without payasam or kheer. Kids as well as the elderly love the sweet Semolina Vermicelli Kheer that is commonly relished after a noon day meal. There are different kinds of vermicelli available in market. Rice vermicelli, whole wheat, ragi and millet vermicelli are some of the known types. Sugar is the sweetener for payasam dishes and that is left to your wish and requirement. Some prefer dessert dishes mildly sweet while some prefer too much sweetness, especially if kids are involved. While roasting semolina and vermicelli, make it a point to use ghee. You get a ghee flavored creamy payasam that tastes even more delicious. While roasting, care has to be taken so the semiya and vermicelli is not too much browned and burnt. Burnt taste destroys the delicious payasam. Roast in low medium flame to a golden brown color. Remember to roast semiya and vermicelli separately so the texture is not damaged. Also make sure that the dessert is free of lumps. Stirring well removes lumps if any. This is a nutritious dish rich in milk and other nutrients. This is an apt dish for kids and the elderly who need energy for day to day activities. Instructions
  1. Take a thick bottomed vessel and add roasted vermicelli and semolina.

  2. Pour milk, water and combine well. Add crushed cardamom and a pinch of salt. Cook until vermicelli and rawa is cooked and done taking about 6 to 7 minutes in a medium flame.

  3. When it begins to boil, add sugar. Stir until it dissolves completely. The consistency of the payasam must be medium thick as it becomes thicker when cooled. Remove from the flame. Rest it for about 5 to 10 minutes before you serve. Add roasted nuts(optional), stir and serve.
