Ingredients
  

  • 500 g Large Fresh Shrimp
  • 2 nos Eggs
  • 1/4 cup Water
  • 1/2 cup Corn Starch
  • 5 tbsp Flaked Coconut
  • 1 tbsp Sugar
  • 1 tsp Salt
  • 1/2 cup Flour

Instructions
 

  • For preparing Shrimp Fry, first mix together eggs and water. Set this aside.
  • Place 1/4 cup of cornstarch in bowl for dusting of shrimp.
  • Mix in a separate bowl, 1/4 cup (the remainder) of cornstarch, sugar, salt and flour and blend well.
  • Heat oil for deep-frying.
  • Roll shrimp in cornstarch mixture, then in egg and finally roll in coconut flakes.
  • Place shrimp in hot oil and deep fry until done. Take care not to overcook them.
