2 cups All purpose flour (Maida)4 nos Eggs1 tsp Cardamom powder (Elakka)2 tbsp Sugar50 g Cashew nuts (chopped)50 g Raisins/Kismis6 nos Shallots (chopped, Kunjulli)Salt (As reqd)Water (As reqd)Ghee (As reqd) For preparing special egg pathiri, first knead flour well by adding water and salt as required.Make small balls out of the dough and press it as we make chapatti.Apply ghee on it and fold the four corners and press again(this is called kannu pathiri) and then keep it aside.For preparing egg filling, mix eggs with sugar and cardamom powder. Scramble the egg mixture in a pan.Fry cashew nuts, kismis and shallots in ghee one by one separately. Add it to the egg scramble made above and stir well. Keep this aside.Take an oiled tawa and fry the kannu pathiri, pouring in little ghee, till it becomes light brown in color.Fill the egg filling inside the fried kannu pathiri with a spoon.Fry it again in the pan on both sides in low heat.Special egg pathiri, a tasty recipe is ready.
