Spicy Brinjal Curry Spicy Brinjal Curry for chappathis - Ramya V 4 nos Brinjal (Preferably Long green ones)1 no Onion (big)2 nos Tomato2 nos Potato (optional)2 tbsp OilFor masala:-1 tbsp Coriander seeds2 - Dry Red chillies (Kollamulaku)1/4 tsp Pepper1/2" piece Cinnamon (Karugapatta)3 - Cloves (Grambu)1 no Cardamom (Elakka)1/4 tsp Cumin seeds (Jeerakam)1/4 tsp Aniseeds (Perinjeerakam)2 tbsp Grated coconut4 - Shallots (Kunjulli) Roast masala. Roast coconut and shallots. Grind them with spices.Heat oil in a pan or a kadai. Saute diced onions. Add diced brinjal and potato. Stir till cooked.Add ground masala and tomato puree.Add salt and mix well.Garnish with coriander leaves. :- Serve hot with chappathis. Kerala
