Sardine fry is a crispy and spicy, flavorful starter or a side dish for hot rice. This sardines fish is so abundant in Kerala and every morning fishmongers would bring loads of them in baskets and would sell them door to door.We all know these small, silver-colored fish are cheap, yet tasty and packed with loads of goodness.They are also a great source of vitamin D, omega-3 fatty acids, protein, calcium and phosphorus and support cardiovascular health and reduce the blood sugar level, which are very important for all age groups.This Mathi fry is a kerala style easy to prepare and tastes great with rice. Sardines in malayalam it is called Mathi and chala, different places kerala has different names for Sardines. This Sardine Fry gets special taste from the button onions. This mathi fry is a definitely a very good recipe and can make the lunch a special one. Enjoy the Chala Fry with Rice Porridge or with rice and fish curry.

  • Clean the fish and gash closely.
  • Grind together chilli, garlic, ginger, onion, pepper and mustard along with salt.
  • Rub the ground masala onto the fish and marinate for a while.
  • Pour small quantities of oil at a time in a heavy skillet.
  • Fry the fish on both sides over a low fire.
  • Spicy Mathi fry / Chala Fry is ready, serve it hot. The crispiness for Sardines fry can vary from person to person. Some likes it very crispy. I personally likes it little soft so that the whole masala and the flavour of the fish can be tasted.
