Ingredients
- Finely chopped spinach : 1 bunch -
- Brinjal cubed : 2 small -
- Onions finely chopped : 2 nos -
- Tomato finely chopped : 2 nod -
- Minced garlic : 2 - 3 cloves
- Green chillies chopped : 2 - 3 nos
- Whole red chillies : 2 nos -
- Cinnamon : 1” pc -
- Cloves – 3 - 4 nos
- Whole jeera : ½ tsp -
- Turmeric powder : ½ tsp -
- Red chilli powder : ½ tsp -
- Oil : 2 tsp -
- Salt to taste -

Instructions
- Enter Step
- Add whole red chillies, cinnamon, cloves and onions and fry for 6 - 8 minutes.
- Enter Step
- Add chopped tomato, green chillies, red chilli powder, turmeric powder and salt.
- Stir fry the masala for 3 - 4 minutes till the oil separates and the masala is cooked.
- Cover the pan and cook on a lower flame for 15 - 20 minutes stirring occasionally till the vegetables are cooked.

- Serve with roti / paratha.
