Yakhni Chicken Pulao

Yakhni Chicken Pulao is Kashmiri recipe made using rice, chicken and a lot of Indian spices that is full of essence and flavours. The meaning of yakhni is stock of meat like chicken or mutton. This yakhni is an urudu word. This chicken pulao is very tasty simple to do. This rice recipe is a flavourful option to serve as a party recipe and even family dinner. This tempting combination of chicken and rice is best served with mixed veggies raita and people of all age groups will love it. While cooking the recipe make sure that you seal the pot with foil or atta dough properly, else the dish will lose its aromatic fragrance. Here, the rice is cooked in a masala and the chicken is cooked along with the Yakhni and the whole recipe is brought together to release all its flavour into this aromatic pulao. We should be very careful with choose this rice. This long-grain makes more perfect for this pulao. Serve this With Chicken with Raita over a Family lunch on a Sunday afternoon.   • 1/2 kg Chicken
  • 3 No Onions
  • 1 tsp Ginger garlic paste
  • 1 no Bay leaf
  • 4 no Cardamom, Cloves, Cinnamon each
  • 1/2 tsp Cumin seed
  • 1/2 tsp Funnel seed
  • 1 tsp Coriander seed
  • 1 no jathipathri
  • 1 tsp Bell pepper
  • 2 slices Ginger and garlic
  • 2 no Green chili
  • 1/2 tsp Red chili powder
  • 2 tbsp Curd
  • 11/2 tsp Salt
  • 4 tbsp Oil and ghee
  • 2 cup long basmati


  • In pan add chicken one onion and cut in cubes, whole spices and sliced ginger and garlic and add half salt boil with one liter water
  • Boil for ten minutes and turn off allow to cool
  • Now strain chicken from that stock and keep separate
  • In pan add oil and ghee add few spices like cloves, cardamom, cinnamon
  • Now add onion and green chilli and ginger garlic paste saute well
  • Now add chicken and red chili powder and salt
  • Now add curd and mix well cook for 5 minutes
  • Now add chicken stock which called as Yakhni and add required water for pulao. example if you have 2 cups then add 1 and half cup water for 2 cups of basmati rice.
  • In mean time soak basmati rice. When mixer boils add rice mix well and close lid
  • In this mean time add oil in other pan fry onion well keep aside then open pan sprinkle the fried onion and coriander leaves and mint leaves
  • Now close lid for 10 minutes the rice will cook well with the dum and turn off the flame
  • Now its ready to serve hot Yahkni chicken Pulao
