  • 1 tbsp Vanilla custard powder
  • 1/2 tsp Vanilla essence
  • 3 cups Milk
  • 3-4 tbsp Sugar
  • Agar Vegetarian gelatine) - 10tbsp(chopped
  • 1/4 cup Almonds finely chopped
  • Sugar For the caramel


  • For preparing almond-custard brulee, soak the agar-agar in 3/4 cup of cold water for 3-5 minutes and cook it on low flame till it dissolves.
  • Boil the milk and sugar. Add the custard paste to it. Continue cooking until you get a smooth sauce.
  • Add the dissolved agar-agar to the custard and boil again for 2 minutes.
  • Filter the mixture and let it cool slightly.
  • Add half the almonds to this custard and mix well.
  • Pour this mixture to the serving cups and freeze it till firm.
  • Heat the sugar in a pan with 1 tbsp of water in medium flame till the sugar melts and turn light brown in color and caramelized.
  • Pour the caramel over the set custard and garnish with almonds on top.
  • Serve immediately.
