Ingredients
- Eggplant (medium)(Brinjal/Vazhuthananga) - 1 no
- Chopped onion(optional) - 1/2 cup
- Grated Coconut - 2 tbsp
- Any masala powder - 1 tsp
- Chilly powder - 1 tsp
- Salt(As reqd) -
- For seasoning: -
- Oil - 2 tbsp
- Asafoetida(A pinch, Kayam) -
- Turmeric powder - 1/2 tsp
- Curry leaves(A few) -
- Mustard seeds - 1 tsp
- Black gram(Uzhunnuparippu) - 1 tsp
- Red /green chillies - 2 nos

Instructions
- Cut eggplant into small pieces.
- Heat oil in a pan.
- Add all the ingredients for seasoning one by one.
- Add chopped onions and fry till translucent.
- Add finely cut eggplant and stir fry on a low heat. Don`t cover the pan.
- Fry till they are cooked.
- Add salt, chilly powder and masala powder and fry for a few minutes.
- Add freshly grated coconut and mix well.
- :- Serve with plain rice.
