  • 2 bunch Spinach chopped palak
  • 1 cup Sweet corn kernels
  • ½ tsp Freshly ground black pepper powder
  • ½ tsp Soda bi carbonate
  • 1 tsp Sugar
  • Salt as reqd
  • ½ cup Mozzarella cheese

For white sauce:


  • To prepare the spinach:1) Clean, chop and wash spinach / palak. Add salt, sugar and soda bi-carbonate and steam in the microwave. Blanch the spinach in cold water and drain out the excess water.
    Baked Spinach & Corn –
  • To make white sauce : 2) Melt butter in a pan. Whisk in flour and stir continuously until smooth, about 2-3 minutes making sure there are no lumps formed. This is called a roux.

  • Pour in the milk gradually stirring all the while until the sauce thickens.

  • When the sauce has thickened add salt, freshly ground black pepper and grated nutmeg and mix well.

  • Add the corn kernels and cook for 2-3 minutes.
    Baked Spinach & Corn –
  • Add the prepared spinach to the corn and cook on medium flame for another 2-3 minutes. 7) Transfer this to a baking dish and sprinkle with grated cheese.
    Baked Spinach & Corn –
  • Bake in a preheated oven at 250 °C for 10-15 minutes till the cheese melts and turns golden brown.
