Bean Vermicelli And Prawn Stir Fry

  • 500 gms Bean vermicelli
  • 200 gms Red prawn meat deveined, washed and drained
  • 100 gms Bean sprout
  • 1 no Onion thinly sliced
  • 1/2 bulb Garlic crushed
  • 2 stems Lemon grass white part only very thinly sliced
  • 1 Red capsicum thinly sliced
  • 2 nos Egg whisked
  • 2 tbsp Fish sauce
  • 2 tbsp Light soy sauce
  • 2 nos Spring onions thinly sliced diagonally
  • Salt to taste
  • White pepper a sprinkle
  • 2 tbsp Oil for cooking


  • Soak noodles in warm water for 20 minutes till soft.
  • Drain well and keep aside.Use a scissor to snip it to make shorter length.
  • Heat oil in a wok, add onions, garlic, lemon grass and stir fry for 2- 3 minutes.
  • Add prawns and toss around continuously till the prawn meat changes color.
  • Add capsicum and cook for 30 seconds and stir in noodles.
  • Cover and steam for 1 minute until the noodles are heated through.
  • Add the fish sauce, soy sauce, lemon juice and toss well using two wooden spoons.
  • Add seasoning and pepper and transfer to a warm platter.
  • In the same pan spread oil and heat.
  • When sufficiently hot, add beaten eggs and swirl the pan.
  • Cook on both sides till golden, then remove and shred it to pieces. :-Serve on top of noodles.
