Sauted prawns with noodles

Ingredients
- Bean vermicelli - 500 gms
- Red prawn meat(deveined, washed and drained) - 200 gms
- Bean sprout - 100 gms
- Onion(thinly sliced) - 1 no
- garlic(crushed) - 1/2 bulb
- Lemon grass(white part only very thinly sliced) - 2 stems
- Red capsicum(thinly sliced) - 1
- Egg(whisked) - 2 nos
- Fish sauce - 2 tbsp
- Light soy sauce - 2 tbsp
- Spring onions(thinly sliced diagonally) - 2 nos
- Salt(to taste) -
- White Pepper(a sprinkle) -
- Oil(for cooking) - 2 tbsp

Instructions
- Soak noodles in warm water for 20 minutes till soft.
- Drain well and keep aside.Use a scissor to snip it to make shorter length.
- Heat oil in a wok, add onions, garlic, lemon grass and stir fry for 2- 3 minutes.
- Add prawns and toss around continuously till the prawn meat changes color.
- Add capsicum and cook for 30 seconds and stir in noodles.
- Cover and steam for 1 minute until the noodles are heated through.
- Add the fish sauce, soy sauce, lemon juice and toss well using two wooden spoons.
- Add seasoning and pepper and transfer to a warm platter.
- In the same pan spread oil and heat.
- When sufficiently hot, add beaten eggs and swirl the pan.
- Cook on both sides till golden, then remove and shred it to pieces. :-Serve on top of noodles.
