Black Eyed-Rajma Bean In Olive Oil
Black eyed/rajma bean, onion, capsicum and other ingredients are cooked in olive oil

  • Black eyed beans/Rajma bean(boiled) – 250g
  • Onion(chopped) – 1no
  • Capsicum(chopped) – 1no
  • Chilly powder – 1tsp
  • Ginger(chopped) – 1/2tsp
  • garlic(crushed) – 1clove
  • Vinegar – 1/4tsp
  • Coriander leaves(finely chopped) – 1tbsp
  • olive oil 1tbsp
  • Salt(As reqd) –
  1. First cook rajma beans with salt, turmeric powder, chilly powder and coriander powder in a pressure cooker. SautT onion, garlic and ginger in heated olive oil. Add chilly powder and vinegar. Fry well.
  2. When the onion become translucent add chopped capsicum, cooked beans and salt.
  3. Mix and cook for 5 minutes. Garnish with chopped coriander.
  4. Black eyed/rajma bean in olive oil, a healthy, easy to prepare side dish for rice, chappathy, roti, naan etc is ready.
