Chicken Vindaloo Spicy, rich n hot chicken 1 kg Chicken5 nos Red chillies (Kollamulaku)1 1/2 tsp Black pepper1/4 tsp Mustard seeds1/4 tsp Black jeera4 nos Cloves (Grambu)1 no Cinnamon (Karugapatta)2 nos Cardamom (Elakka)2 tsp Ginger (thinly sliced)2 tsp Garlic10 nos Cashew nuts (soaked in water)10 nos Raisins (Onakka munthiri)2 nos Tomato (diced)3 nos Onion (thinly sliced)Salt (As reqd)1 - OilCoriander leaves (A bunch) Marinate the chicken with some salt and turmeric powder for 30 mins.Make a powder of red chillies, black pepper, mustard seeds, black jeera, cloves, cinnamon and cardamom.Mix this masala powder with a little water.Grind the cashews and raisins together and set aside.Heat oil in a pan or a kadai.Saute onion, till brown.Add garlic and ginger and saute for a min.Add the masala paste and stir, till the oil separates.Add the diced tomato and stir well for 2 mins.Add the marinated chicken and let the chicken get coated well with the masala.Add 1 1/2 cups of water and salt.Cover and cook on a medium heat, till the chicken is well done.Add the cashew and kismis paste and remove from heat.Garnish with chopped coriander leaves.:- Serve with palappam, vellappam or chappathi.
