Ingredients
- All purpose flour - 1 cup
- Castor sugar - 1/2 cup
- Butter, softened - 1 cup
- Baking powder - 1 tsp
- Baking soda - 1/4 tsp
- Salt - 1/4 tsp
- Sugar(melted) - 1/4 cup
- Eggs - 2 nos
- Fruits:(plum ,dates,cherry,tutty fruity ,raisins etc soaked in 3/4 cups of rum for 1 or 2 days) - 1 cup
- Dry fruits(cashew nuts ,almonds etc) - 1/2 cup
- Vanilla extract - 1 tsp
- Cardamom powder - 1/2 tsp
- Cinnamon - 1/2 tsp

Instructions
- Preheat oven to 180 degrees.
- Grease bottom and sides of a 9 x 3 inches round cake pan. Dust the pan with flour and set aside.
- In a mixing bowl ,mix all the dry ingredients (flour, baking powder, baking soda , salt , sugar and masala powder)
- In another bowl, whisk together the eggs and butter till creamy.
- Add caramel syrup,vanilla and the fruit rum mixture and dry fruits to it and mix lightly,(don`t over mix)
- To this bowl, add the dry ingredients in slowly and stir with a spatula until just blended. Do not over mix.
- Pour batter into the prepared pan and bake for 40 to 45 mins until a toothpick inserted into the centre comes out clean.
- Cool the cake in the pan for 20 mins before unmoulding.
- :- Let cool completely.
