Dates Cake has been by far the best cake that I have ever eaten that tasted soo good even though it was not loaded with any frosting. Dates Cake is a traditional dark loaf cake typically made with plain flour mixed with dates and topped with nuts. it is generally made during Christmas celebrations but can also be served as an evening snack. It is generally made with plain flour but you can also use wheat flour as a healthy alternative. This is a simple Dates Cake with wonderful flavor. Dates Cake is a delight to bake. The recipe needs cooking of crushed dates before baking. Cooking of dates in caramelized syrup is what makes this No Oven Cake exotic. Dates provide that sweet chunky flavor that makes the cake irresistible. My kids love Dates Cake like anything.

Dates Cake | No Oven Cake

Ingredients
  

  • 200 g Dates
  • 1/2 cup Sugar
  • 3/4 cup Water
  • 1 cup Maida
  • 1 tsp Baking powder
  • 1/4 tsp Baking soda
  • 1 pinch Salt
  • 6-8 tbsp Sugar
  • 3 Nos. Cloves
  • 2 Nos. Eggs
  • 1/2 tsp Vanilla essence
  • 1/2 cup Sunflower oil
  • 1/4 cup Almonds crushed

Instructions
 

  • Take a thick bottomed pan and add 1/2 cup sugar+3 tbsp water. Let the sugar dissolve in this water.
  • Stir occasionally and let the sugar caramelize, colour turning to golden brown. Then add 3/4 cup water and bring it to boil.
  • Now add crushed dates and cook for 5 minutes in medium flame.Turn off the flame and keep it aside for cooling down.
  • Preheat a large pot or old pressure cooker for 5 minutes on medium flame. Place a ring stand in the center of the cooker for separation. Meanwhile powder the remaining sugar by adding clove.
  • Take a mixie jar, blend eggs and powdered sugar for 30 seconds. Then pour oil and blend for 5 seconds.
  • Pour the egg mix into the caramel date mix. Combine it well with a spoon.
  • Add the flour mix little by little and mix by combining using the cut and fold method.
  • Add some crushed almond nuts and mix well.
  • Transfer the batter to the greased cake tin. Pat the tray twice to remove the air incorporated into the batter. Top with more almonds to make it more attractive. Now slowly place the cake tin in the preheated cooker and close the lid. Heat for 30 minutes in medium flame and 20-25 minutes in low flame.
  • Check if cake is baked with a cake tester or a toothpick. If toothpick comes out clean that indicates the cake is baked properly. Remove and cool completely. Finally, serve the dates cake and store in an airtight container.
