  • Mix flour, egg, salt and cardamom powder long with enough water to make a smooth dough.Knead very well to incorporate all the ingredients.
  • Cover the dough with a damp cloth and leave in the kitchen counter for around 15-30 mts.
  • Dust the kitchen counter with enough flour.
  • Divide the dough into equal parts and start working on one ball at a time, meanwhile leaving the other balls under the cloth.
  • Flatten the dough ball into a rectangle shape using a rolling pin and cut out equal strands of ribbons.
  • Now make slanted cuts in one ribbon voila you got diamond shaped cuts.
  • Repeat the steps for rest of the leftover dough balls.
  • Heat a wok with enough oil and fry the cuts out (few at a time).
  • The cuts will puff up and ends will start browning up. :- This is the perfect cooking for the cuts.
  • Drain them in kitchen towel and keep aside.
  • Mix water and sugar on a stove top and you get a threadlike consistency.
  • Coat the diamond cuts with the sugar syrup and keep them aside for cooling down. :- You can dip diamond cuts in the syrup and drain them using a slotted spoon. 13)Once the cuts are cooled, store them in an airtight container.
