Delicious & nutritious spinach soup
Instructions
- Heat olive oil in a heavy bottomed pan.
- Add the minced garlic and sauté for one minute. Add the finely chopped onions and fry till onions are pink in color.
- Cook in the pan without the lid for 4 - 5 minutes till the spinach has wilted.
- When the spinach mixture has cooled down, grind it in a food processor or mixer to make a smooth puree.
- Sieve the puree through a strainer and bring to a boil before serving.
- Garnish with freshly ground black pepper and fresh cream (optional).
