Hot Bread Pudding Bread pudding 1 loaf Sliced bread1/4 cup Sugar1/2 tin Milkmaid3 cups Milk1/2 cup Dry fruits (Walnut, Almonds, etc, chopped)1/4 tsp Cinnamon powder (Karugapatta)1/4 tsp Cardamom powder (Elakka)2 tbsp Cornflour1 tbsp Pistachios (chopped) Choose a casserole which will fit 4 slices of bread arranged in a square shape. Sprinkle a tsp of cornflour at the bottom of casserole. Keep aside. Mix cornflour 1/2 cup cold milk till blended. Sprinkle cardamom and cinnamon over it. Keep aside. Mix sugar in 1/2 cup warm milk till dissolved. Keep aside. Heat remaining milk, boil till reduced to one cup. Add milkmaid, cornflour mixture and stir continuously. Cook till thick enough to coat back of spoon. Stir in chopped dryfruit except pistachios. Keep mixture aside, stirring frequently to avoid surface layer forming. Arrange 4 slices bread on dusted base of casserole. Sprinkle some sweet milk over bread slices. Spread onefourth of mixture on slices. Place another layer of bread slices, sprinkle some milk again. Repeat till all bread and mixture is used up, topping with mixture. Sprinkle pistachios, cool to room temperature. When completely cold, refrigerate for 1 hour. Bake in preheated oven, till top layer becomes a light golden. :- Serve hot as is with chocolate sauce/ with icecream scoops. Kerala
