Jilebi also known as zalabia and zulbia is an Indian sweet delicacy very popular over Middle East and South Asia. It is prepared by deep frying maida batter in circular shapes and then soaking in sugar syrup. This sweet is a melt in mouth special delicacy and is usually prepared for festive occasions. Indians relish this sweet dish not only during festive season but throughout the year. Children are very addictive to this sweet. The batter is prepared by mixing together urad dal, raw rice and other ingredients. The sweet can be easily prepared at home with minimum ingredients. This is a very easy dish.   • 2 cups Urad dal Uzhunnu parippu
  • 1/4 cup Raw Rice
  • 500 g Sugar
  • 400 ml Vegetable oil/ghee
  • Rose essence Few drops
  • Jilebi colour A pinch


  • For preparing the sweet delicacy, soak urad dal and raw rice separately for about one hour.
  • Grind urad dal in a grinder till it becomes frothy.
  • Grind raw rice finely in a mixer grinder. During grinding add just enough water only.
  • Mix the two and keep aside for 30 minutes.
  • In a kadai heat oil/ghee and make round coils out of the batter into the oil(you can make any shapes of coils, usually it is flower-shaped) and fry till they are crisp and golden in colour. It should not become brown.(For making coils, squeeze the batter through a press).
  • In another kadai, add 2 cups of water and sugar and heat to make a syrup. Add food colour and rose essence.
  • When the fried coils are warm dip them in sugar syrup, Leave for 2-3 minutes and take them out.
  • Jilebi, a yummy sweet recipe is ready. This sweet dish is a favorite with both the young as well as old.
