Do not penetrate deep since the white will be exposed.Slice the orange rind into long, thin strips and soak overnight in enough water.Next day, discard the soaked water and pour enough water into the orange rind. Boil the water and cook for 45 minutes in medium heat until the rind is done.(You can also use pressure cooker to cook the rind)Take a vessel and stir in sugar. Add orange juice, citric acid, cooked orange rind and remaining water.Stir well and boil the mixture. When a one string consistency is achieved, remove orange marmalade from fire and add orange essence.
