Paneer burji omelette is Indian cottage cheese scrambled and then add with spices and then it is been turned to omelette. This is a very different way of serving the goodness of paneer and eggs with all vegetables in it. This is a mumbai style recipe and also a personal favourite among all the eggetarians.

- Eggs : 4 nos -
- onions chopped 1/2 cup -
- capsicums chopped 1/2 cup -
- carrots grated 1/2 cup -
- scrambled paneer 1/2 cup -
- coriander and curry leaves few -
- pepper 1 sp -
- Salt to taste -
- green chilli chopped 1/2 sp -

- in a bowl mix onions ,capsicums, and carrots
- to this add scrambled paneer
- add chillies, pepper and salt
- break eggs and mix it up
- in a tawa cook the omelette both the sides and serve hot
