- Bitter gourd(cut into small pieces, Pavakka) - 1/4 kg
- Red gram(Thuvaraparippu) - 1 cup
- Green chillies - 4 nos
- Tamarind(Puli) - 1 lemon
- Asafoetida(Kayam) - 1 small
- Turmeric powder - 1/4 tsp
- Salt(As reqd) -
- Black Pepper Powder - 1/4 tsp
- Grated Coconut - 2 tbsp
- Coriander seeds(Malli) - 1 tsp
- Fenugreek seeds(Uluva) - 1/2 tsp
- Dry red chillies(Kollamulaku) - 10 nos
- Coconut oil - 1 tbsp
- For seasoning: -
- Coconut oil - 1 tbsp
- Mustard seeds - 1 tsp

Instructions
- For preparing Pavakka Puliozhichu Kootu, first cook the red gram separately in a pressure cooker.
- Heat up a vessel.
- Add tamarind soaked in water along with green chillies, asafoetida, turmeric powder, salt and black pepper powder.
- Bring this mixture to a boil.
- Add bitter gourd pieces and allow it to cook.
- Heat oil in a pan.
- Fry fenugreek, coriander and dry red chillies.
- Grind this along with the grated coconut.
- Add the cooked red gram and this paste to the bitter gourd mixture.
- Allow it to cook for a few mins.
- When it comes to a boil, remove from flame.
- Crackle some mustard seeds, red chillies and curry leaves in another small pan.
- Add the above seasoning into the bitter gourd mixture and mix well.
- Pavakka Puliozhichu Koottu is ready.
