- All purpose flour - 2 cups
- Baking powder - 1 tsp
- Soda bi carbonate - 1 tsp
- Ginger powder - 1 1/2 tsp
- Cinnamon powder - 1/2 tsp
- Sugar - 1/2 cup
- Egg(whisked) - 1 no
- Milk - 3/4 cup
- Butter(melted) - 1/3 cup
- Pineapple(diced) - 3/4 cup
- Raisins - 1/2 cup
- Almonds / cashew nuts(chopped) - 1/4 cup
- Salt - 1/4 tsp

Instructions
- Preheat oven to 160 c. Line 12 muffin tin with paper cups.
- Sift together the flour, cinnamon, ginger, baking powder, soda powder into a deep bowl.
- Add the butter mixture, fruits and nuts to the sieved flour.
- Add milk slowly to the flour mixture and mix until the ingredients are just combined. :- Do not over beat the batter.
- Spoon the batter into the paper cups and bake for 20 -25 minutes or until done. :- Fill the paper cups till 3/4 only. :- Pineapple Muffins is ready!!
