Kerala Plum Cake | Christmas Fruit Cake

Unwrapping The Essence Of Christmas

Let’s delve into the world of Kerala Plum Cake, a delightful treat that often steals the spotlight during Christmas celebrations. Imagine the aroma of rich, spiced goodness wafting through the air as you enter a Kerala home during the festive season. The Kerala plum cake, also known as Christmas Fruit Cake, is a culinary masterpiece that goes beyond being a mere dessert, it’s a tradition, a symbol of togetherness, and a sweet embrace of the holiday spirit.

The Uniqueness Of Kerala Plum Cake

When it comes to celebrating Christmas in Kerala, the plum cake takes center stage. Families gather in kitchens, the air filled with laughter and the clinking of utensils as generations come together to bake this delectable delight. But what makes Kerala plum cake so special?

Symphony Of Flavors

Firstly, it’s the unique blend of spices that dance on your taste buds. Cloves, cardamom and cinnamon combine in a harmonious symphony, creating a flavor profile that’s both nostalgic and comforting. The warmth of these spices not only adds depth to the cake but also mirrors the warmth of the festive season.

Choice Of Fruits And Nuts

The choice of ingredients is crucial. Kerala plum cakes are often studded with an abundance of dried fruits and nuts, creating a texture that is both chewy and crunchy. The candied fruits bring a burst of sweetness that is balanced by the earthiness of the nuts.

Nurturing Traditions

The cake itself is a symbol of time-honored traditions. Passed down through generations, the recipe is a testament to the rich cultural tapestry of Kerala. Each family may have its own secret ingredient or unique twist, but the essence remains the same, a celebration of love, unity, and the joy of giving.

Sweet Conclusion

Wrap up the journey with a celebration of the magic that happens when the first slice is cut. From the shared smiles around the table to the lingering taste that lingers on the palate, the Christmas Fruit Cake is more than a dessert, it’s a culmination of tradition, love, and the spirit of the season.

  • For preparing Kerala Plum Cake, first heat a pan with 3 tbsp of sugar in it. Stir it and allow it to melt.
  • Take 4 tbsp of water. Wait till the sugar melts and turns to dark brown color. Now we have a thick caramel syrup. Keep it aside.
  • Melt the butter in a bowl. (Heat it in microwave for some time.)
  • Add sugar (200 g) into it and beat it well.
  • Add vanilla sugar into it.
  • :- If it is difficult to get vanilla sugar, add plain sugar plus 2 drops of vanilla essence.
  • Add 4 eggs into it and beat it well.
  • When it is mixed well, mix baking powder and maida thoroughly and add into it.
  • Beat it very well.
  • Add caramel into it.
  • Grind together the masala(cardamom+cinnamon+cloves) into a fine powder and add into it.
  • Beat it once again to mix all these ingredients.
  • At last we have to add all dried fruits into it. Before that keep aside around 10 - 15 full cashews (we need it to keep on the top of the cake) and cut the rest of cashews into the small size and mix it with other dried fruits and add it to the cake mix.
  • Now don`t beat, but mix it with a tablespoon.
  • By this time pre-heat the oven for 10 minutes 180ª.
  • Pour the mixture to a baking tin (I used to make in 26 or 28 cm diameter) and decorate it with cashews on the top.
  • Bake it for 1 hour in 180ª.
  • Let it cool for a day before cutting..
