Ingredients
  

  • 4 nos Tomatoes
  • 240 g Boneless pork loin chopped
  • 60 g Fresh bacon fat
  • 20 g Bread
  • 4 springs Parsley chopped
  • 1 clove Garlic chopped
  • 2 nos Shallots chopped, Kunjulli
  • 1 no Egg yolk
  • 3 tbsp Olive oil
  • 3 tbsp Milk
  • Nutmeg As reqd
  • Pepper powder As reqd
  • Salt As reqd

Instructions
 

  • For preparing stuffed tomatoes with pork, soak the bread in milk.
  • Mince the pork.
  • In a bowl add in the soaked bread, minced pork, garlic, parsley, shallots, salt, egg yolks, bacon fat, 1 tbsp olive oil, nut meg and pepper powder. Keep this stuffing aside.
  • Pre heat the oven at 200 degrees celsius.
  • Cut off the top of the tomatoes to make a lid and spoon out the inside.
  • Fill each tomato with the stuffing.
  • Put the stuffed tomatoes into a oven tray, spreading the pulp around the sides and pour over with the remaining olive oil.
  • Bake it for 40 minutes.
  • Stuffed tomatoes with pork is ready.
