  • For preparing brioche, beat half of the maida, butter, sugar and salt in a processor.
  • Add the rest of the maida, yeast, milk, egg white and 1 egg yolk. Beat for 1 minute until you get a smooth and supple ball of dough.
  • Leave the dough to stand for 1 hour covered with a cloth in a warm place.
  • Then work briskly by hand and put it into a greased and dusted brioche tin.
  • Cover and leave to rinse until the dough has doubled in volume.
  • Preheat the oven at 180 degrees celsius.
  • Brush the surface of the brioche with the egg yolk and bake for 35 minutes.
  • Brioche is ready.
