Chapati also known as Indian flatbread is simple, tasty and the quickest recipe in India. It’s the main cuisine in North India. They consume chapati in every meal. Chapatis can be consumed with any side dish, non veg or vegetarian as you prefer. It doesn’t matter whatever the side dish, as long as the roti is soft. I have grown up eating Soft Chapati and here is my guide to follow. We can add little warm milk or water to maintain chapati soft. If you add milk you should consume it earlier. Whereas warm water can store it for longer time. Kneading well also does the trick in making the dough soft and smooth. Nowadays dough kneading food processors are available but personally I like kneading with hand. Chapatis can also be termed magical since they use just one ingredient and that is whole wheat (Atta) flour. No leavening ingredients like baking powder or yeast is used. Knead well and keep aside for a few minutes.

You need a rolling pin and a rolling board for making the flatbread. In Hindi the board is termed ‘chakla’ and the pin ‘belan’. It took me a few years to learn how to make a soft roti. Keeping the dough aside for few minutes before making rotis, softens the dough. When you roll a chapati, learn to roll it even and not thick here and there. Apply equal pressure while making a chapati and and the roti will automatically spin around as you roll. Another important tip is that the tawa should be hot before a roti is added to it. Otherwise the roti will stick to the tawa and will not puff up as desired. So heat the tawa well in medium heat before a roti is added. Soft and delicious chapati/rotis are ready. Instructions
  1. In a bowl add flour, required salt and sugar.

  2. Now mix this roughly and add oil. Mix well.

  3. Now add milk and mix. Knead well and add water if needed, Make a smooth dough.

  4. Now add oil for applying on outer dough.

  5. Now cover with cloth and rest for 10 minutes.

  6. After ten minutes now make small balls and keep aside.

  7. Now make thin flat chapatis with dough

  8. Now fold in triangle shape and roll well.

  9. Now it's ready to cook.

  10. Now heat tawa and cook one side for 30 seconds and when it absorbs water and starts to bubble, turn the other side.

  11. Now it's cooked and then flip other side.

  12. Now apply ghee for both sides and take from tawa.
