Dried Mango Pickle Dried Mango Pickle 1 kg Dried mango pieces1/4 cup Salt1 cup Gingerly oil2 tbsp Mustard seeds2 tsp Fenugreek seeds (Uluva)1 tsp Turmeric powder1/2 cup Garlic flakes2 tbsp Ginger (sliced long)1/2 cup White vinegar2 tbsp SugarSalt (As reqd)1/4 cup Mustard (broiled and husked)For grinding:2 cups Boiled and cooled water3/4 cup Chilly powder2 tsp Fenugreek seeds (Uluva)1 tbsp Asafoetida(fried in oil and powdered) (Kayam)24 nos Garlic flakes2 tsp Ginger (long slices) Grind the ingredients reqd to make a paste using the boiled water. Heat oil in a pan.Splutter mustard seeds and fenugreek seeds.Add turmeric powder and garlic.When garlic is half fried, add ginger and stir for a few seconds. Add the ground paste and saute. Add the boiled water so as to get a thick gravy. When it starts to boil, briskly mix vinegar, sugar and salt.Let the gravy get thick and then remove from fire. Stir in the dried mango slices when the gravy becomes cold. Add the husked mustard and mix well.:- Store in air tight bottle. Kerala
