Ingredients
- Eggplant(Brinjal/Vazhuthananga) - 1
- Grated Coconut - 4 tbsp
- Onion(chopped) - 1/2
- Sugar(A pinch) -
- Salt(As reqd) -
- For seasoning: -
- Oil - 2 tbsp
- Black gram(Uzhunnuparippu) - 1 tsp
- Mustard seeds - 1/2 tsp
- Red chillies or green chillies - 2 nos
- Asafoetida(Kayam) - 1/2 tsp

Instructions
- Grill or roast eggplant on a gas stove. Remove the skin. If these are not available, then pressure cook the eggplant without adding water. Then take it on a plate and mash with a ladle. Keep aside.
- Heat oil in a pan.
- Add all the seasoning ingredients one by one. When it splutters, pour it over the mashed eggplant.
- Mix well.
