Lady's Finger-Bhindi In Coconut Curry Lady`s finger/bhindi/vendakkai pieces are fried and cooked in coconut milk and other ingredients 125 g Lady’s finger/Bhindi (cut into 1 1/2 inch pieces)1/2 cup Coconut milk1 spring Curry leaves1/4 cup Shallots/small onions (Kunjulli)2 nos Green chillies (slit)1/2 tsp Gharam masala powder1 1/4 tsp Coriander powder3/4 tsp Red chilly powderGinger (chopped)1 tsp Saffron powder1 tbsp Coriander leaves (chopped)1 1/2 tbsp OilSalt (As reqd) For preparing lady¦s finger/bhindi in coconut curry, first fry the ladies finger pieces in oil till it turns to golden brown in color. Keep this aside.In the remaining oil, saute shallots, green chillies, curry leaves and ginger for a few minutes.Stir in the fried ladies finger, gharam masala powder, chilly powder, saffron powder and coriander powder.Mix well and fry till the masala is well coated on the bhindi pieces.Pour coconut milk and boil for few minutes.Garnish with coriander leaves.
