Mango(Manga) curry

Ingredients
- Raw mango - 2 nos
- Red chilly powder - 2 1/2 tsp
- Coriander powder - 1/2 tsp
- Turmeric powder - 1/2 tsp
- Thick coconut milk - 1 cup
- Thin coconut milk - 1 1/4 cup
- Salt(As reqd) -
- Curry leaves - 2 stem
- Oil(Coconut oil is best) - 2 tsp
For tempering:
- Oil - 1 1/2 tsp
- Mustard seeds - 3/4 tsp
- Fenugreek seeds(Uluva) - 1/4 tsp
- Curry leaves - 1 stem
- Whole red chillies(broken into two, Kollamulaku) - 4 nos

Instructions
- Cut mango into small pieces without skin.
- Roast red chilly powder and coriander powder.
- Mix the mango with roasted powders, turmeric powder, salt, curry leaves and oil. Leave it for ten minutes.
- Keep the flame in minimum, until oil appears on top of the curry.
- Switch off the gas and leave it for two minutes. 8)Heat oil in a pan.
- Add mustard seeds and let it splutter.
- Add fenugreek, curry leaves and broken red chillies.
- Pour it into the curry.

Superb! Tried this twice and it was a big hit. Just want to add that if the mangoes are semi ripe, it tastes better. That way, its not too sweet or too sour.

Very Nice Nisha!! It came out like typical nadan curry, adding little chuvannulli (one small) before roasting chilly and coriander powder makes it even better. (oil-il chuvannulli vazhatti chilly pwder and coriander powder athilittu mooppikkuka, then mix it with manga as mentioned.) also , adding a pinch of kayam is good.
