Olan Easy Olan Traditional Kerala dish - Payar, elavan and mathan in coconut milk Ingredients for Olan :1/2 cup Black eyed beans (Van payaru)2 cups White gourd (chopped into thin slices of about 3 cm by 3 cm, Elavan)2 cups Yellow pumpkin (chopped into thin slices of about 3 cm by 3 cm, Mathan)4 nos Green chillies (slit)1/2 cup Grated coconutCurry leaves (A few)1 tsp Coconut oil1 tsp CornflourSalt (As reqd) Preparation Method of Olan : 1)Lightly roast the beans and soak it in water for 8 hrs. Wash & strain well.Extract 1/2 cup of thick milk and 1/2 cup of thin milk from the grated coconut.In a pressure pan, add beans, both vegetables, chillies and second coconut milk.Pressure cook upto 1 whistle.After opening the lid, add salt and thick milk mixed with cornflour.Simmer, stirring till the flour is cooked and all the ingredients are well blended.Add coconut oil and curry leaves.:- If you prefer the beans to be very soft, pressurise it first separately for 2-3 whistles and add. :- It is safer to add salt at the end to Olan because the volume shrinks after cooking and you can judge better.:- Olan is ready.
