- Bittergourd - 1 medium
- Onion - 1 small
- Shallots - 5
- Green chilly - 3
- Ginger - 1 tsp
- Curry leaves -
- Hot water - 1 cup
- Tamarind water - 1 tbsp
- Tomato - 1
- Chilly powder - 1/2 tsp
- Turmeric powder - 1/4 tsp
- Coriander powder - 1 tsp
- Coconut oil - 2 tbsp
- Thick coconut milk - 1 cup
- Mustard seed - 1/4 tsp
- Fenugreek seed(one pinch) -
- Dry red chilly - 2
- Jaggery(small pc) -
- Salt : As required -

- Heat oil in a pan and saute bittergourd for 10 minutes.
- Remove the sauteed bittergourd.Now heat oil and splutter mustard seed,fenugreek seed and add shallots and green chilly.
- Saute for 4-5 minutes.
- Add all powders and saute till the raw smell goes.
- Add tomatoes and cook well.
- Open and add jaggery and thick coconut milk.Add curry leaves and mix well.no need for boiling the curry.Remove it from the flame and serve.
- Enjoy with rice
